José Baptista

José Baptista, membro honorário do Departamento de Ciências da Física, Química e Engenharia da Faculdade de Ciências e professor associado convidado da Universidade dos Açores. É membro do Instituto de Investigação e Tecnologia Agrárias e do Ambiente da Universidade dos Açores. Desenvolve investigação no âmbito da química dos produtos naturais, ciência e tecnologia dos alimentos, particularmente na extração, separação e determinação da bioatividade de metabolitos secundários de plantas e organismos marinhos dos Açores. Experiência na determinação das atividades antioxidantes, antitumoral, inibidora da enzima conversora da angiotensina I, e na determinação do teor de compostos fenólicos e flavonoides totais usando a cromatografia líquida de alta pressão (HPLC) e a cromatografia de gás. Tem ainda experiência na elucidação estrutural de compostos isolados, e na determinação da composição de alimentos funcionais e nutracêuticos (teores de proteínas, lípidos, hidratos de carbono, perfil de ácidos gordos: SFA, MUFA e PUFA e determinação de aminoácidos, vitaminas, fibras e minerais) e o seu impacto em diversas patologias. Investigação de biomarcadores celulares com implicação nas doenças cardiovasculares.
